Founded in 1956. From the soil of Yonagunijima ‘s sake brewery, black aspergillus was harvested and succeeded in culture. As a specialty shop for supplying “Koji” which is an important raw material of “Awamori” which is a local sake in Okinawa, we currently supply seed koji to 38 out of 46 Awamori Manufacturers in the prefecture. At the same time, we are also researching and developing products using black koji mold, and new products such as “black koji brown rice drink” are also born.
